A little bit of my story:

I began to be interested in nutrition from a very young age (I am currently 25 years old), but it was not until adolescence that I knew that I would dedicate my life to this career. I am the mother of a beautiful 5-year-old girl whom I adore and plan to instill in her all the values ​​that guide us towards a healthy and balanced life. I was born and raised in Charleston, South Carolina, where I currently live, and have my own practice where, of course, I practice my profession as a nutritionist.

When did I become interested in nutrition ?:

Honestly, long before I knew what healthy eating really was. I was raised in a home where healthy habits prevailed, but like most teens, I didn’t care what I ate as long as it tasted good (meaning mostly junk food).

It wasn’t until I started experiencing severe headaches during high school that I realized that my lifestyle influenced how I felt. Initially, I took the obvious route of going to a doctor, who prescribed the corresponding medication, and in effect, my migraines disappeared, but I also began to feel tired throughout the day, which also prevented me from carrying out activities that I previously enjoyed.

I spent a long time searching for answers until I realized that the foods I was eating were not the best for my body, mind, and spirit. Shortly after changing my diet, thanks to a nutritionist known to my father who helped me with its preparation, I began to feel much better. The lack of energy was replaced with a vitality that I had never experienced before and the feeling of general well-being was evident.
It was then that I understood the importance of leading a healthy life and that it was my help to other people to discover this fact.

About my recipes:

Before focusing on what my recipes are not, I will tell you precisely what they are. My recipes have a large number of nutrients, antioxidants, are delicious, simple to prepare, and aim to feed your body with everything it requires to function properly. All recipes on EvesDiet.com are free of refined or processed ingredients. I support flexibility and creativity in the kitchen as long as they guide us towards a correct diet. Eating healthy doesn’t have to be complicated. In fact, it is the opposite, nothing is simpler than using natural and organic food as the main raw material.

My recipes are inspired by different cultures. I like to share flavors from all over the world, especially those that have to do with my roots (Spain and Italy, countries where my grandparents come from). For this reason, you could find ingredients in some of my recipes that are not so easy to find in some countries.
